Emerald Kettle Pancake Recipe

2 cups of flour (cake flour if you have it)
1 tspn baking powder
2/3 tspn sugar
1/2tspn salt
2 eggs separated
2 cups milk
5 tbls melted butter

Whisk egg whites to medium peaks, in another bowl whisk egg yolks with melted butter. mix all dry ingredients in a bowl, add milk to the egg yolk butter mixture, then fold into the egg whites and add to the dry ingredients, stir only to bring together, it will be lumpy. pour into a hot frying pan or griddle until you see holes in the pancake (about 45 seconds to 1 minute) then flip pancake cook 35 seconds more, now its ready to eat.
